Brazil — Delarisse
This coffee from Ruvaldo Delarisse is a dry processed coffee from the Minas Gerais region of Brazil, which produces most of the specialty grade coffee from this ‘super power’ of world coffee production. Dry processing basically means the harvested cherry is dried intact, which allows the coffee bean to absorb some of the fruit-like characters from the mucilage and outer layers of the coffee cherry, adding complexity. Dry processing requires careful monitoring to ensure no fermenting or spoilage takes place during the drying stage and is a traditional method that has been practiced in Brazil for many generations.
This coffee is more elegant and complex than the typical heavy bodied and simple Brazilian coffees, probably due to the high altitude of this estate.
It’s no surprise that this coffee has figured prominently in the Illy Brazil Quality award for many years.

Cupping Notes
Whilst there is nice body and luxurious mouth feel it’s all held in check by a deliciously tart fruity acidity that is reminiscent of biting into a granny smith apple. This fruit driven acidity gives the coffee a very balanced and harmonious flavor profile. No individual characters leap out of the cup but there is a nice progressive building of intensity across the palate.
